  • 1 ½ cups of cups water
  • 1 cup of uncooked arborio rice
  • 1 tsp salt
  • 2 lightly beaten large eggs
  • ⅔ cup of sun-dried tomato pesto
  • 2 cups of panko bread crumbs
  • Warmed marinara sauce


  1. Preheat the oven to 375 degrees.
  2. Mix the rice, salt, and water in a large saucepan and wait for it to boil.
  3. Lower the heat and simmer with a cover for 18 to 20 minutes or until the liquid gets absorbed and the rice becomes tender.
  4. Let it stand with a cover for 10 minutes.
  5. Place it in a large bowl and let it cool a little bit.
  6. Add the pesto and eggs and mix a cup of breadcrumbs in.
  7. Put the rest of the bread crumbs in a shallow bowl.
  8. Form 1 ¼-inch balls using the rice mixture and roll them in the bread crumbs. Pat them so that the coating will stick.
  9. Place them on a greased 15x10x1-inch baking pan.
  10. Bake for 25 to 30 minutes or until they become golden brown. Serve with the warmed marinara sauce.

For the crepe noodles:

  • 1 cup of whole milk
  • 1 ½ cups of all-purpose flour
  • ½ tsp salt
  • 3 large eggs
  • For the filling:
  • 1 jar meatless spaghetti sauce
  • 1 tbsp minced fresh parsley or 1 tsp dried parsley flakes
  • 1 large egg
  • 1 ½ lb ricotta cheese
  • ¼ cup of grated Romano cheese

Optional: grated Romano cheese


  1. Put the flour and whisk the eggs, salt, and milk in a bowl until it becomes smooth.
  2. Lightly grease an 8-inch skillet and heat it. Put around 2 tbsp of the batter in the middle of the skillet. Spread it to make a 5-inch circle. Cook on medium heat until it comes set. Do the same for the remaining batter.
  3. Stack the crepes and use wax paper between. Put aside.
  4. To create the filling, mix all the cheese, parsley, and egg,
  5. Put ¾ tbsp down in the middle of the crepes.
  6. Put half of the spaghetti sauce in an ungreased 13×9-inch baking dish.
  7. Put the crepes with the seam facing down on the sauce and pour the rest of the sauce over the crepes.
  8. Cover and bake it at 350 degrees for 20 minutes.
  9. Remove the cover and bake for 20 minutes or more or until well-heated. Put Romano cheese on top if you want.

Bruschetta Chicken

  • ½ cup of egg substitute or 2 beaten large eggs
  • 2 seeded and chopped large tomatoes
  • 2 minced garlic cloves
  • 1 tbsp olive oil
  • ¼ cup of grated Parmesan cheese
  • ½ cup of all-purpose flour
  • ½ tsp salt
  • 4 boneless skinless chicken breast halves
  • ¼ cup of dry bread crumbs
  • 3 tbsp minced fresh basil
  • ¼ tsp pepper
  • 1 tbsp melted butter


  1. Preheat the oven to 375 degrees.
  2. Put the egg substitute and flour in different shallow bowls.
  3. Put the chicken in the flour and then in the egg substitute.
  4. Place it in a greased 13×9 inch baking dish.
  5. Combine the bread crumbs, butter, and cheese in a small bowl and sprinkle it on the chicken.
  6. Cover the baking dish loosely using foil—Bake for 20 minutes. Remove the cover and bake for 5 to 10 minutes more or until the thermometer reaches 165 degrees.
  7. Combine the rest of the ingredients and tomatoes in a small bowl and use a spoon to put it on the chicken.
  8. Bake for 3 to 5 minutes or until the tomato mixture is well-heated.
